Pisco is a grape distillate. It appeared in the 1600s in America and is considered America’s first distillate.
In the 1700s, the production of Pisco surpassed that of wine in Peru. It was then that Pisco began to become a well-known distillate and to be exported everywhere Later in the 1800s in California, with the rise of gold, the California Gold Rush, the famous Pisco Punch was created.
In San Francisco, the “Bank Exchange Saloon” was the most famous cocktail, until the Prohibition period in 1920. In 1916, Pisco Sour was created in Peru at the “Morris” Bar.
Pisco can only be produced from 8 specific grape varieties, which are divided into 2 categories: Aromatic and Non-Aromatic. These grape pickles must come exclusively from a region (department) of Peru, Lima, Ica, Arequipa, Moquegua or Tacna.

Barsol is distilled in one of the oldest distilleries in the Ica Valley, Bodega San Isidro The fermentation is done exclusively from grapes from the valley. Barsol is the Pisco that deviates directly from the alcohol grades it is bottled.
