Don Papa Masskara is a tribute to this wonderful event, celebrating the resilience and personality of the finest sugarcane and the people who grow it.
A unique blend is made with rum, aged in oak American bourbon barrels, with the specially distilled calamansi blend (a native fruit, famous for its intense citrus notes), and with wild chili siling labuyo, to achieve a mild heat numbness, before adding the local tropical honey for a final note of sweet complexity.
The story of Don Papa Rum begins at the foot of the active volcano Mt. Kanlaon, where sugar cane is ground to create a sweet, rich molasses. The Philippines has historically been one of the top ten sugar cane producers in the world! The island of Negros, or Sugarlandia, as the locals call it, produces over half of the country’s total sugar production. “Don Papa” is a tribute to Papa Isio, the true and charismatic leader of the Negros, who in the 1890s helped the island and won the island’s independence from the Spanish.
