Distillation takes place on the island of Negros and ages in the unique volcanic climate, at the foot of Mount Kanlaon. For this reason, it has developed an extra layer of complexity. It is initially aged for two years in bourbon barrels and the rum is then transferred to barrels of Porto wine for an additional five years of aging. Each barrel is full of vibrancy, freshness and charm. The result It is a rum that is dark, spicy in character and fruity. It has aromas of dark chocolate, muscovado sugar, sanguine, ripe red berries, and a subtle hint of vanilla. In addition, in each sip you can taste notes of burnt oak, cinnamon, Arabica coffee, caramel and discreet fresh fruit with an aftertaste of dried figs.
The story of Don Papa Rum begins at the foot of the active volcano Mt. Kanlaon, where sugar cane is ground to create a sweet, rich molasses. The Philippines has historically been one of the top ten sugar cane producers in the world! Negros Island, or Sugarlandia, as the locals call it, produces over half of the country’s total sugar production. “Don Papa” is a tribute to Papa Isio, the true and charismatic leader of the Negros, who in the 1890s helped the island and won the island’s independence from the Spanish.
