The Japanese art that goes by the name of Nikka whiskey is the “child” of Masataka Taketsuru, the first person to create Japanese whiskey. With extensive experience in the distillation of Scotch malt, in 1933 he opened his own distillery with the aim of creating his own premium Japanese whiskey. Today, Nikka Japanese whiskeys have 2 distilleries, one in Hokkaido (Yoici Distillery) and one in Miyagi (Miyagikyo/Sendai Distillery). Το Yoichi είναι το τελευταίο αποστακτήριο που χρησιμοποιεί θέρμανση από άνθρακα στην Ιαπωνία, κάτι που βοηθάει για να διατηρηθεί ο παραδοσιακός χαρακτήρας του αποστάγματος. Από την άλλη στο Miyagikyo παράγεται ουίσκι πιο ελαφρύ και φρουτώδες όμοιο με αυτά των Lowlands της Σκωτίας. Αξιοσημείωτο είναι πως εδώ αναμιγνύουν malt ουίσκι με grain ουίσκι μια διαδικασία που κάνουν ελάχιστα αποστακτήρια στη Σκωτία.
